Did you know that when you microwave-dry your fresh herbs, they keep their vibrant color instead of fading out? It’s a nice option when you like to incorporate the bright green of herbs throughout the winter. It’s also an easy way to quickly preserve a huge herb harvest at end of season.
Wash herbs thoroughly and lay well-spaced on two paper towels. Microwave 1 minute and then several additional 20 seconds increments until herbs turn brittle. You’ll notice they don’t lose their vibrancy but dry out perfectly. Store in air-tight jars until use. It’s super simple and makes a world of difference in presentation.
