Herb Roasted Sweet Potatoes w/Feta & Bacon

Too simple for a formal recipe!

Slice sweet potatoes into 1/4″ rounds.
Lay on well-oiled baking tray {I used coconut oil and added a bit of oil from my tahini for flavor depth}
Sprinkle moderately with pumpkin pie spice.
Add fresh sprigs of thyme and intersperse throughout.
Bake at 400 degrees for 20 minutes.
Flip potato rounds over and load with feta cheese and bacon crumbles.
Bake another 10 minutes until tender.

Optional: add any combo of roasted walnuts/pecans, dried cranberries, mini marshmallows, or coconut flakes. So many options!
